Hale’s Bakery opened on Mill Lane in the year the tram came to Port Aurel. A hundred years later, the fourth generation of the family still starts baking at 4am.

Jonah Hale, 34, took over from his mother three years ago. The shop still sells the seed loaf his great-grandfather made, although it now also ships sourdough to cafés across the city.

People come in and tell me their grandparents bought bread here. You cannot buy that kind of loyalty.

— Jonah Hale

The bakery will give away a loaf to the first 100 customers on Saturday.
